christmas cookies

I make the cookies only once a year now, but when BabyGirl and The Niece were intfinks, I made cookies more often.Y'know, 'cause good Mom. *koffDonnakoff*

I make Chocolate Chips, and Peanut Butter kisses(mmm! So good!) 'cause I have this weird thing for peanut butter. I make Mexican Wedding cookies and Oatmeal Scotchies, ymmm,and Thumbprint Shortbread, and if I'm feeling especially bakey, I'll make Linzer Cookies, which are not real hard but it's a lot of prep and fussier than the others. Speed and ease, that's my baking motto.

Some of these cookies are recipes from friends and those are the best kind.

my beloved friend Jo makes pizzles(sp?) every year, you know those flat waffle things that are so light and crispy that...damn! I'm hungry.

Why all this cookie talk? Trying to psych myself up I guess.*G* Help me!

Will you share the recipe for Peanut Butter Kisses? I have a weird thing for peanut butter too. I think I'm allergic to it, but it's my main comfort food.

Sure! It's a very , very easy recipe--
one 18oz. jar peanut butter
1 1/4 cup sugar
2 large eggs

you stir all that stuff together until it makes a dough (and it'll be sticky) then you must flour your perfect little hands and roll out lovely little one inch balls. Put these balls on a cookie sheet-- (not greased) in a 350 degree oven for 14 minutes. (they'll crack in an artistic way.Very pretty) Take them out of the oven and right away press a little chocolate kiss on top. You don't have to, but chocolate and peanut butter? To die for !
