Happy Fourth of July to all! I'm stunned. I don't have to work today--I think this is the first time I've been off on the fourth. It's been an odd year--I've been off on most of the big holiday's I think. Weirdness.

So...cooking going on at the Rose Plantation. BBQ'ing. No one's quite worked up the balls to ask me not to make my infamous Macaroni Salad--MMMM> So Bland You Could Die! so there'll be a heaping bowl full, you betcha. Eventually everyone's going to get the hint and stop coming to my house for free Fourth Eats. It doesn't help that Mr. Roxy can make some BBQ that makes grown folk cry. He's that good. Mr. Roxy can make meat sing.

Let's just think about that for a moment.

But disturbing images aside, he can cook, thank the Baby Cheeses, or we'd all have starved to death long ago.

Anyhoo--stay tuned later, darlings, there'll be fic, and after that, I'll make waffles!

This Creamy Potato Salad is a total winner. I just emailed it on request to my older son's girlfriend for today:

Creamy Potato Salad

8 Servings

6 medium potatoes (2 pounds)
2 cups thinly-sliced celery
¾ cup finely-chopped onion
1/3 cup diced sweet pickle (do not exceed this amount)
1-1/4 cups Best Foods mayonnaise
2 teaspoons sugar
2 teaspoons white vinegar
2 teaspoons prepared mustard
1-1/2 teaspoons salt
4 hard-cooked eggs, coarsely-chopped.

In a covered saucepan, cook potatoes in boiling salted water 25-30 minutes or till tender; drain well and cool. Peel and cube potatoes. Transfer to a large bowl.

Add celery, onion and sweet pickle.

Combine mayonnaise, sugar, vinegar, prepared mustard and salt.

Add mayonnaise mixture to potatoes. Toss lightly to coat potato mixture (if you over toss, the mixture will toughen). Carefully fold in the chopped eggs. Cover and chill thoroughly.

For best results, follow exactly/do not substitute.

Oh, the hard-cooked eggs should read

2-4 hard-cooked eggs.

Cuz the more you use, the more the sauce is taken up for them and it makes it more bland, so if two eggs is too saucy, add 1 or two more very carefully.

Oh gawd, girl -- now you got my mouth watering! I just LOVE barbecue. Chicken, ribs, steaks -- you name it, I'm there. We're two blocks from a street that has at least five rib joints on it, two of which have those big oil drum grills outside that they cook on. Ohhhh, baby! *drools* When the wind blows our way, I'm DYIN'.

So, you make your own sauce? Is it secret, or can you share? :)

Its good to have a man that can cook. At least with him cooking you don't have to and you can enjoy your break.

Your macaroni salad can't be that bad. Macaroni salad by definition kicks ass. I'm yours must fall into that category.

It is in fact the beloved Mr.Roxy's secret recipe. He does the dry rub thing, which is good, sometimes wet just for me*grin*
I have no idea what goes in it...what's up with these recipes being secret anyway? everyone I know has some 'secret' ingrediant they put in it--could be crack for all we know...*eyesballs sauce suspiciously*

also, I wanna live on *your* block! *drools with you*

Child--trust me, my salad is so bad that folks want it just because they can't believe it's that *bad* --hence, infamous! *grin* But I'm clool, better infamous then unknown, heh!
