YES to the sideburns - they wouldn't work for most guys, but they so work for him! :D
As for straight vs. tousled, I like it both ways - and while I'm sure the hairdressers blow it out give it more polish, my hair is pretty similar in texture to his - that is, it will dry straight or wavy depending on whether I comb it out beforehand, how I shape it with my fingers, etc. Jus' saying, it's not as unrealistic as you might think.
